Ingredients 1 Bunch of kale 2 Fuji apples 1 Pound of goat cheese 1/2 Pound of dried cranberries 1/2 Pound of walnuts 1/4 Cup of extra virgin olive oil 1/2 Cup of unfiltered apple cider vinegar 2 Tbsp raw honey 1 Garlic clove 2 Lemons 1 Tsp sea salt 1 Tsp freshly-ground black pepper
Preparation Rinse and dry kale thoroughly, cut into bite-sized pieces, and place into a mixing bowl. Sprinkle in dried cranberries and walnuts. Dollop in goat cheese. Slice rinsed and dried Fuji apples and toss in freshly-squeezed lemon juice in a separate bowl. Allow diced apples to sit in juice for approximately 5 minutes. Combine extra virgin olive oil, unfiltered apple cider vinegar, raw honey, minced garlic, sea salt, and freshly-ground black pepper and whisk until ingredients are thoroughly blended. Drain diced apples from lemon juice and add to kale salad. Drizzle vinaigrette over kale salad and lightly toss.
